The Polish economy has been flourishing since it joined the European Union in 2004. The country has the highest GDP among Central and Eastern European countries. It is therefore no surprise to discover that the stereotypical, disparaging image of Polish cuisine is very much outdated nowadays. I travelled the length of the country recently to discover what Polish cuisine truly means in 2025.

Meet The Chef: Chet Sharma of BiBi

Opening a restaurant is nothing if not a labour of love. But, behind the business dealings and logistics, is a deep-rooted passion for food. Meet The Chef: Kate Austen of The Great British Menu

8th July 2024

Despite ending the first challenge—a vegan starter—with the lowest score amongst the chef challengers, Austen came back with a vengeance to become the first female chef in the show’s 19-year history to win the main course with her stuffed quail, truffle French toast, and scotch egg dish. Though Austen is not currently working in a restaurant, she has quite the Michelin-starred line-up under her belt: Morston Hall, Marcus Wareing, AOC, and Frantzen to name a few. “Cooking in Scandinavia was awesome,” she says. “In Denmark, my eyes were opened to a new style of cooking which is always exciting and challenging. I was immersed in the whole side of pickling and preserving, something that was relatively new to me, but the Nordics are known for. The kitchen was so calm and controlled, a different service to the many covers I had done in the UK. And I loved it.” Austen explains that cooking in the Nordics taught her about having focus, attention to detail, and precision, and she soon realized that she had found her style. She soon moved on to a tougher challenge, joining a three-Michelin star restaurant in Sweden as a sous chef. “That carries with it a lot of proving of oneself. At times I found the attitude intimidating and tiring but I worked diligently and earnt my stripes. I think if you are moving in the top circle of any industry, then your role will be challenging and tricky at times – arguably that’s why you are there, because you can handle it,” she says. It’s that determination, coupled with her unparalleled technique, that truly helped Austen stand out on The Great British Menu. With a new notch under her belt, I ask her if she’s ready to leave the private chef world behind and make the leap into becoming a restaurateur. “I think there is a part of me that will always want and crave a restaurant. I love the buzz of it, I live for creating dishes that evoke emotions and leave memories, and it’s an area that I believe I understand well,” she shares. “However, London intimidates me from a business point of view. I feel like it used to be a place you came to with nothing and left with something, but we all know the issues that surround restaurants: Rising rent, rising wages, rising food costs. I don’t know how to manage this side of the business, and with such a hugely saturated market already, I would be nervous. Never say never though… “

Meet The Chef: Nathan Cornwell of Silver Birch

Cornwell comes with a pedigree that is bursting with Michelin stars—Kitchen W8, Geranium in Copenhagen, Oaxen Krog in Stockholm, and The Barn at Moor Hall, to name a few. Cooking was always on the horizon for Cornwell, who says he knew from a young age that it was a passion of his and one that he knew he would eventually pursue as a career. “I had strong love with produce as my family grew their own veg and loved all things food,” he shares. A few days after our dinner at The Silver Birch, they were awarded the coveted 3 AA Rosettes, an absolutely well-deserved achievement! The restaurant has a welcoming and accommodating neighbourhood vibe. It’s clear that most diners are locals, and we overhear some tables talking about how there’s nothing like The Silver Birch in the area. There’s no frills about Cornwell’s cooking, but it’s in fact in the simplicity of the elements on the plate that each ingredient is able to shine. Cured sea bream, crispy pig’s head, and an herby cheesy cracker arrive as a welcoming trio of snacks. Organic celeriac sits beautifully in a broth of celeriac tea, with picked onions and herbs adding texture and crunch. Oscietra caviar makes its appearance in a dish with smoked eel from Devon, bathed in a sauce of pickled leek and chives. Desserts are a tantalising display of technique, textures, and flavours such as those in the show-stopping brown butter chocolate delice with caramelised white chocolate. The Sybarite speaks to Cornwell about his new venture and his favourite thing about Chiswick.

What better way to treat myself than head to Ragdale Hall Health Hydro and Thermal Spa. With a team of over 460 staff, this privately owned retreat set amongst the soothing peace of the Leicestershire countryside is a relaxing heaven. The guests are predominantly women (90%) and the 93-bedroom spa offers luxurious pampering with a huge range of facilities including six pools, heat experiences, tennis, boules, pitch ‘n’ putt, croquet, cycling, and a mind gym are all available.   My aim for my Overnight Reviver Break was total relaxation. On arrival, my mum and I were greeted by the friendly and polite Guest Liaison team who offered a refreshing drink while we were booked in. Valet parking is offered to all guests, and our luggage was whisked up to the room in a matter if minutes.

Floor to ceiling windows seem to be an important theme for each of the hotels as is the service, and most notably, the locations and architecture. Take for example The Upper House in Hong Kong, though located in the city center its infrastructure evokes discretion, minimalism and above all the characteristics of luxury living in a subtle sort of matter. These qualities are intrinsically similar to The Middle House except for its architecture. What you get at each of these houses are individualism at its core and by that we mean to say that each house has been designated an architect to design the hotels based on their own style whilst heavily incorporating the essence of the brand. Located on Shanghai’s Hongqiao side of the city, The Middle House is well advantaged when it comes to proximity from the city center whilst maintaining an air of discretion and calm. When double checking the location of the restaurant on my phone, I saw that it was located a minutes walk from Hackney Central Overground Station - and it wasn’t lying. Within a minute of stepping off the train, I was stood outside the seemingly secluded venue and was pleasantly surprised with what I found. Stepping inside the large Nordic themed restaurant I was expecting to hear the trains rumbling past, but for the entire duration of my meal - not a peep was heard from them which helped to create the illusion of actually being in a secluded Nordic restaurant. The room was open and spacious with grand high ceilings, however, felt really intimate and cosy making this venue the perfect place for brunch dates - or if you're visiting with a group of friends you can take advantage of the long tables and benches which are perfect for socialising.

Both brothers are Michelin-star recipients in their own right, and have worked with some of the biggest names in the industry, including Antony Worrall Thompson, Sir Terence Conran and Nico Ladenis. The restaurant itself is located off the new-look double-height lobby of the Athenaeum hotel, which is far from a traditional hotel lobby and provides guests with more of a retro lounge feel. Upon arrival, we walked through from the bar and were guided to our white marble table – a particularly millennial touch. Seating 94 guests, it’s a relaxed, comfortable space with an elaborate central chandelier, dark wood tables and a neat display of Galvin cookbooks. After making ourselves comfortable and of course instagramming the beautiful bouquet arrangements in the centre of the restaurant, we were given a welcome glass of champagne to peruse the extensive menu with. After much deliberation, I settled on the Dedham vale beef steak tartare to start, which came beautifully seasoned with a raw yolk as the cherry on top, while my companion had the crab and lobster linguini as a small portion which was mouthwateringly delicious and served with the perfect amount of chilli in each mouthful.

Ok maybe not, but still, it is one of those things that you don’t want to be kept waiting for. Well, that dread of waiting for your bill to arrive at your table might no longer be an issue – for some 300 restaurants in London at least. Probably one of the best and most useful apps in town at the moment is the Velocity app , co-founded by childhood friends and ex Goldman Sachs employees, Zia Yusuf and Alex Macdonald. Of course, they were not the first to realize that restaurant-goers usually have to wait minutes till their bill arrives, but they are currently one of the few in the fintech world to deliver an app that is truly changing the way restaurants utilize mobile payment.
